2 cups boiling water
2 cups diced potatoes
½ cup diced celery
½ cup diced carrots
¼ cup diced onions
1½ tsps. salt
¼ tsp. pepper
Simmer 10 minutes, do not drain.
Make a white sauce with the following
¼ cup margarine
¼ cup flour
2 cups milk
1 cup shredded cheddar cheese
Pour into vegetables. Heat and serve.

1¾ cups instant mashed potatoes
1½ cups dried milk
2 tbsps. instant chicken bouillon
2 tsps. dried minced onion
1 tsp. dried parsley
¼ tsp. ground white pepper
¼ tsp. dried thyme
1/8 tsp. turmeric
1½ tsps. seasoning salt
Combine all ingredients in a bowl;
mix well. Put ingredients in a 1 quart jar.
On gift tag: Place ½ cup
mix in soup bowl; add 1 cup of boiling water; stir until smooth.
CROCKPOT DRESSING (10-27-98 ) 1-11-03 top of page
1 cup margarine
2 cups chopped onion
2 cups chopped celery
¼ cup parsley sprigs
13 cups dried bread cubes
1 tsp. poultry seasoning
1½ tsps. salt
1½ tsps. sage
1 tsp. thyme
½ tsp. pepper
½ tsp. marjoram
4 cups chicken broth
Some diced giblets, to taste
2 eggs, well beaten
Melt margarine in pan; sauté
onions, parsley and celery. Pour mixture over bread cubes in a large
bowl. Add seasonings and toss to
coat. Pour broth over cubes, then add eggs; mix thoroughly. Put
mixture in crockpot; cover and
cook on high for 45 minutes. Reduce heat to low and cook at least 4
hours.
CROCKPOT PORK CHOP W/DRESSING (may/jun98pg4) 1-11-03
1 pkg. (6oz.) Stovetop Stuffing
mix
1 can cream of mushroom soup
1 tsp. curry powder
4-6 boneless pork chops
Grease crockpot. Mix stuffing as directed, but only use one cup water. Put half of dressing in bottom of crockpot. Spoon ½ can of soup on top. Sprinkle with curry powder. Place chops on top. Add rest of stuffing, then soup. Cook on low, 6-7 hours.
If a recipe calls for frozen coconut,
you can get unsweetened, dry coconut and add some moisture to
the recipe or buy a coconut and
shave it. You can also buy it at Super Wal-Mat.

Peel a lime and toss it in the blender with crushed ice and any alcohol; vodka or whiskey.

1 small can frozen lemonade
1 small can frozen limeade
1 small can of tequila.
1 shot glass of Triple sec
Fill blender with crushed ice.
SPAGHETTI CASSEROLE PIE (may/jun01pg8) 1-11-03
2 lbs. Ground beef
½ medium onion, chopped
32 oz. jar of spaghetti sauce
4 tbsps. margarine
3½ tbsps. flour
1½ cups evaporated milk
2/3 cup water
2 cups shredded mozzarella cheese
8 oz. spaghetti
Brown the meat and the onion. Drain.
Add the sauce. Cook spaghetti (break it in half), rinse and drain.
Combine with the sauce mix. Combine
the margarine, flour, milk and water. Cook until slightly thickened.
Add 1 cup of the cheese. Stir 'til
melted. Spread ½ of the spaghetti mix in the 9 x 13" pan (greased).
Add
cheese mix. Top with the remaining
spaghetti mix. Then top with the rest of the cheese. Bake for 30
minutes at 350 degrees.

¾ cup margarine
1 can sweetened condensed milk
3 tbsps. milk
10 ozs. peanut butter chips
10 ozs. chocolate chips
11 ozs. milk chocolate chips
1 cup butterscotch chips
Melt ingredients in a saucepan,
stirring with a wooden spoon. Add a 7½ oz. jar of marshmallow
creme, 1½ tsps. real vanilla,
½-1 tsp. almond extract. Fold in 1 pound walnuts. Mix together and
put in a 9x13" pan. Let cool.
CAKE IN A JAR (Chocolate Brownie Cake) 1-18-03
2½ cups flour
2½ cups sugar
2/3 cup cocoa powder
2 tbsps. instant coffee
2 tsps. baking soda
1½ cups walnuts
2 tsps. powdered vanilla (optional)
Combine into a jar or airtight container.
Gift Tag:
Mix the contents of the jar with:
3 cups sour cream
2 large eggs
½ cup canola oil
2 tsps. vanilla if you can't find
the powdered vanilla
Preheat oven to 350°. Grease
standard size bundt pan. Mix with mixer on medium to low speed
until smooth. Pour into pan. Bake
1 hour 10 minutes, until tests done. Let cake rest 15 to 20 minutes
in pan. Let it cool the rest of
the way. Very moist cake.

melting so you could choose alpine lace or some soy cheeses.
Add a little bit of skim milk when
heating it over the stove and then it will melt easily on anything.
Heart Healthy Pie Crust 1-25-03
2¼ cups flour
½ tsp. sugar
1/3 cup cold skim milk
½ cup + 1 tbsp. canola oil
Mix flour and sugar. Pour milk and oil into same measuring cup, do not stir liquids. Add all at once to the flour, stir with a fork until well mixed form into something ball. Roll out with waxed paper or saran wrap
If you need to bake the crust first, preheat oven to 450° and bake 14-16 minutes.
Lettuce on Lettuce with Garlic Dressing (www.thecookingcardiologist.com) 1-25-03
Ingredients:
1 head of lettuce, romaine or green
leafy lettuce
Vegetable broth or white wine for
deglazing
2 cups shredded lettuce for sautéing
4 fresh garlic cloves
1/2 cup rice vinegar
1 Tablespoon Dijon mustard
1 Tablespoon Honey
Cooking Method:
In a dry sauté pan, roast shredded lettuce. When bottom of sauté pan browns, remove from heat. Deglaze roasted lettuce in sauté pan by drizzling with vegetable broth or white wine. Cool and add to food processor. Add garlic, rice vinegar, mustard and honey. Blend. Serve over lettuce. Dressing can be warm or cold. Add garnish of tomatoes, green onions, or soy "bacon" bits. Serves four.
To make soy "bacon" bits, use 1/2 cup Grapenuts® and 1 to 2 Tablespoons light soy sauce with a touch of liquid smoke flavor if desired. Let dry and sprinkle on lettuce greens.
