PINEAPPLE LEMONADE PUNCH 7-13-19 Top of page
2 cups Country Time lemonade
64 oz. can pineapple juice
3/4 of a 2 liter bottle of 7Up
2 cups cold water
Combine and chill. Pour over ice.
NO BAKE JELLO CHEESECAKE 7-13-19
Graham cracker pie crust
8 oz. whipped topping
1 tsp .vanilla extract
3 oz. pkg. favorite flavor of jello
3 tbsps. cold water
Sprinkle gelatin over 3 tbsp cold water. Let stand for 1 minute. Microwave mixture 30 to 40 seconds. Remove and let stand for about 1 minute. In the same bowl add in whipped topping. Refrigerate 20 minutes. Remove and pour into crust.

red potatoes
1 jalapeno pepper, diced
1/2 onion, diced
mushrooms, chopped
olive oil
powdered Fiesta Ranch seasoning
pepper
1 small can mexican corn
1/3 stick butter
Cube enough red potatoes to almost fill a deep pie pan. Add jalapenos, onion and mushrooms. Coat with olive oil, ranch powder and pepper. Add in corn and butter. Cover with foil and cook on grill on indirect heat. When potatoes are cooked, but not too soft add shredded cheese of choice. Can add sausage for a meal.

1 cup brown sugar
1 cup kosher salt
1 tbsp. minced onion
1 tbsp. garlic powder
1 tbsp. chili powder
1 tbsp. smoked paprika
1-2 tbsp. cinnamon
May add allspice or cloves
1 tsp cayenne pepper
1 tsp red pepper flakes
1 tsp ground black pepper
RASPBERRY DREAM CHEESECAKE 7-20-19
1 small pkg. raspberry (or choice)
regular or sugar free gelatin
2/3 cup water
12 oz. cottage cheese
8 oz. cream cheese, softened (can
use regular, reduced fat or fat free)
8 oz. whipped topping
fruit of choice to match gelatin,
optional
Dissolve gelatin in heated water. Set aside. Blend cottage cheese until smooth. Whip cream cheese and mix with cottage cheese. Whip in gelatin. Fold in whipped topping and fruit. Can use in crust or serve a double batch as a dessert salad.

1 gallon water
1 - 1 1/2 cups kosher salt
1 1/2 cups brown sugar
fresh cracked black pepper (if
brine is cold, peppercorns if hot)
garlic
onion
bay leaves
cinnamon
paprika
chili powder
cayenne
crushed red pepper
Brine chicken for 6 hours to 24 hours. Rinse and dry before grilling.
